No churn vanilla ice cream with chocolate swirl and pistachio paste
Smooth and luscious with crunchy chocolate bits and oozy pistachio cream pockets
Whether it’s Mother’s Day or just a regular Tuesday;
whether you're all about chocolate or can’t resist the flavor of pistachio;
whether it’s the middle of summer or you’re like me, eating ice cream all year round, no matter the temperature;
whether you’re craving something homemade yet low-effort or whether you simply don’t own an ice cream machine (and don’t want to either), this ice cream with a vanilla base, rich chocolate, and pistachio paste is made for you.
Honestly, what more could you want? It’s smooth and indulgent, with pops of nutty pistachio cream and plenty of crunchy, slightly bitter chocolate that keeps each bite interesting and exciting.
It’s one of my favorite flavor combinations and has been long before the Dubai chocolate craze, which I secretly love but only because it’s now so much easier to find good pistachio paste without having to order it online or wait for our (almost) annual trip to Italy. For the record, Sicilian pistachio paste is still my top pick, nothing else has come close.
Serve it in pretty bowls after brunch at home or scoop it into cones for an afternoon treat in the sunshine. Either way, it’s a sweet and simple way to say “I love you”.
Wishing all moms and mother figures a Happy Mother’s Day!
