We love simitia! I've tried making them a few times, but they've never turned out quite right. Will definitely give it another try, thanks!

hahaha It took me a few tries to get them right too at first. The more you make them, the better they will look. But, most important thing is flavor, always :)

Made a practice batch of mini simitia today, so I could work on my braiding - still not very neatly done, especially the joint 🥵.

They also lack the golden crust of yours, cos my aunt asked for something softer that wouldn't need any chewing.

Can't seem to post photos here, otherwise you could have a good laugh at my rather wonky simitia ☺️.

Practice makes perfect :) Put a little water at the ends of the dough before you seal it. It should work.

As for the crust, I have to say the koulouria are not the same without it. You need that crunch, and the flavor of the petimezi.

Thanks for the tip! And yes, these were really "pseudo simitia" 😂, but they made my aunt happy - she had three in a row. The next batch (for myself) will definitely be crust-centric.
