Working with ready-made, store-bought phyllo dough is easy. Don't believe those who tell you otherwise.

I may be speaking from a point of advantage since I've been working with phyllo my whole life, like any other self-respecting Greek who cooks, but still, it is easy. You just need to follow some rules.
