There’s something magical about the way summer demands simplicity. It makes you pause, either through a vacation, a staycation, or through its high temperatures.

It insists that you slow down, no matter what.

When it comes to desserts and sweets, it’s all about the fresh and light flavors but in my world, chocolate is omnipresent. I don’t care for comments like: “Oh, but chocolate is for winter, it’s the epitome of coziness”, because I dare you to show me a person who doesn’t order a double scoop of chocolate ice cream to grace the top of their cone at least once during the summer.

So for me, and hopefully for you too, when the sun’s high and the days stretch long, cravings for chocolate are never far away. And eating it in the form of a popsicle, or fudgesicle, has a dose of whimsy and nostalgia.

In Greece there’s no distinction between a popsicle/ice pop/ice lolly and a fudgesicle, we use the same name for all icy treats on a stick—παγωτό ξυλάκι, which translates to “ice cream (on a) stick”—so when I made these and became aware of the fact that chocolate-flavored popsicles are called fudgesicles in certain parts of the English-speaking world, I was surprised. You live, you learn!

How do you call these in your language, by the way?

These chocolate popsicles with Nutella and chopped raspberries are perfectly balanced. They’re smooth and rich with a velvety chocolate and hazelnut base and just tart enough to keep things interesting. They taste like a lighter chocolate pudding, and they’re indulgent without ever feeling heavy.

The raspberries bring a sharp, refreshing lift; bright, slightly sour, and just icy enough to offset the creaminess. They’re not overly sweet, which makes them all the more elegant, and each bite gives you a little surprise which is that interplay between smooth, fudge-like ice cream and the textured burst of fruit.

Altogether, it’s a light yet luxurious frozen pudding, perfect for all ages. My son looooves these, as do we!

Chocolate popsicles with raspberries and Nutella

I used my homemade chocolate-hazelnut spread rather than Nutella this time, though I have made them with Nutella in the past, too. I prefer the homemade version because it’s not as sweet, but it’s up to you. You can use any other brand that is less sweet or simply use a smaller amount.
